Run out of butter or eggs? Here’s the science behind substitute ingredients

<p><em><a href="https://theconversation.com/profiles/paulomi-polly-burey-404695">Paulomi (Polly) Burey</a>, <a href="https://theconversation.com/institutions/university-of-southern-queensland-1069">University of Southern Queensland</a></em></p> <p>It’s an all too common situation – you’re busy cooking or baking to a recipe when you open the cupboard and suddenly realise you are missing an ingredient.</p> <p>Unless you can immediately run to the shops, this can leave you scrambling for a substitute that can perform a similar function. Thankfully, such substitutes can be more successful than you’d expect.</p> <p>There are a few reasons why certain ingredient substitutions work so well. This is usually to do with the chemistry and the physical features having enough similarity to the original ingredient to still do the job appropriately.</p> <p>Let’s delve into some common ingredient substitutions and why they work – or need to be tweaked.</p> <p><iframe id="IitfH" class="tc-infographic-datawrapper" style="border: none;" src="https://datawrapper.dwcdn.net/IitfH/1/" width="100%" height="400px" frameborder="0"></iframe></p> <h2>Oils versus butter</h2> <p>Both butter and oils belong to a chemical class called <a href="https://chem.libretexts.org/Bookshelves/Introductory_Chemistry/Map%3A_Fundamentals_of_General_Organic_and_Biological_Chemistry_(McMurry_et_al.)/23%3A_Lipids/23.01%3A_Structure_and_Classification_of_Lipids">lipids</a>. It encompasses solid, semi-solid and liquid fats.</p> <p>In a baked product the “job” of these ingredients is to provide flavour and influence the structure and texture of the finished item. In cake batters, lipids contribute to creating an emulsion structure – this means combining two liquids that wouldn’t usually mix. In the baking process, this helps to create a light, fluffy crumb.</p> <p>One of the primary differences between butter and oil is that butter is only about 80% lipid (the rest being water), while <a href="https://www.nutritionadvance.com/types-of-cooking-fats-and-oils/">oil is almost 100% lipid</a>. Oil creates a softer crumb but is still a great fat to bake with.</p> <p>You can use a wide range of oils from different sources, such as olive oil, rice bran, avocado, peanut, coconut, macadamia and many more. Each of these may impart different flavours.</p> <p>Other “butters”, such as peanut and cashew butter, aren’t strictly butters but pastes. They impart different characteristics and can’t easily replace dairy butter, unless you also add extra oil.</p> <h2>Aquafaba or flaxseed versus eggs</h2> <p>Aquafaba is the liquid you drain from a can of legumes – such as chickpeas or lentils. It contains proteins, kind of how egg white also contains proteins.</p> <p>The proteins in egg white include albumins, and <a href="https://www.ncbi.nlm.nih.gov/pmc/articles/PMC5912395/">aquafaba also contains albumins</a>. This is why it is possible to make meringue from egg whites, or from aquafaba if you’re after a vegan version.</p> <p>The proteins act as a foam stabiliser – they hold the light, airy texture in the product. The concentration of protein in egg white is a bit higher, so it doesn’t take long to create a stable foam. Aquafaba requires more whipping to create a meringue-like foam, but it will bake in a similar way.</p> <p>Another albumin-containing alternative for eggs is <a href="https://foodstruct.com/compare/seeds-flaxseed-vs-egg">flaxseed</a>. These seeds form a thick gel texture when mixed with a little water. The texture is similar to raw egg and can provide structure and emulsification in baked recipes that call for a small amount of egg white.</p> <h2>Lemon plus dairy versus buttermilk</h2> <p>Buttermilk is the liquid left over after churning butter – it can be made from sweet cream, cultured/sour cream or whey-based cream. Buttermilk mostly <a href="https://www.journalofdairyscience.org/article/S0022-0302(06)72115-4/fulltext">contains proteins and fats</a>.</p> <p>Cultured buttermilk has a somewhat tangy flavour. Slightly soured milk can be a good substitute as it contains similar components and isn’t too different from “real” buttermilk, chemically speaking.</p> <p>One way to achieve slightly soured milk is by adding some lemon juice or cream of tartar to milk. Buttermilk is used in pancakes and baked goods to give extra height or volume. This is because the acidic (sour) components of buttermilk interact with baking soda, producing a light and airy texture.</p> <p>Buttermilk can also influence flavour, imparting a slightly tangy taste to pancakes and baked goods. It can also be used in sauces and dressings if you’re looking for a lightly acidic touch.</p> <h2>Honey versus sugar</h2> <p>Honey is a <a href="https://resources.perkinelmer.com/lab-solutions/resources/docs/APP_Analysis-of-Sugars-in-Honey-012101_01.pdf">complex sugar-based syrup</a> that includes floral or botanical flavours and aromas. Honey can be used in cooking and baking, adding both flavour and texture (viscosity, softness) to a wide range of products.</p> <p>If you add honey instead of regular sugar in baked goods, keep in mind that honey imparts a softer, moister texture. This is because it contains more moisture and is a humectant (that is, it likes to hold on to water). It is also less crystalline than sugar, unless you leave it to crystallise.</p> <p>The intensity of sweetness can also be different – some people find honey is sweeter than its granular counterpart, so you will want to adjust your recipes accordingly.</p> <h2>Gluten-free versus regular flour</h2> <p>Sometimes you need to make substitutions to avoid allergens, such as gluten – the protein found in cereal grains such as wheat, rye, barley and others.</p> <p>Unfortunately, gluten is also the component that gives a nice, stretchy, squishy quality to bread.</p> <p>To build this characteristic in a gluten-free product, it’s necessary to have a mixture of ingredients that work together to mimic this texture. Common ingredients used are corn or rice flour, xanthan gum, which acts as a binder and moisture holder, and tapioca starch, which is a good water absorbent and can aid with binding the dough. <!-- Below is The Conversation's page counter tag. Coming to terms with the past is more important than ever. The Voice referendum is a vital first step

<p><em><a href="https://theconversation.com/profiles/heidi-norman-859">Heidi Norman</a>, <a href="https://theconversation.com/institutions/university-of-technology-sydney-936">University of Technology Sydney</a></em></p> <p>This Saturday is the final day of voting in the Voice to Parliament referendum, which asks Australians to support recognition of First Peoples in the Constitution and enable First Peoples’ representation on relevant policies and programs.</p> <p>Over the last several weeks, I have attended many events supporting and advocating for the Voice referendum. In these forums, my fellow Australians talk about the Constitution, the role of government and how power is exercised in modern democracy. Some have never read or thought about the Constitution before.</p> <p>I’ve seen young First Nations lawyers explaining to a mixed crowd how the Constitution works, what is included in it and what a constitutionally enshrined Voice would mean. I have been invigorated by such sincere participation in understanding how our democracy works, and could work better.</p> <p>This serious contemplation was getting underway at the Referendum Council’s Aboriginal regional dialogues I attended in 2017. With other Aboriginal people, we discussed what change could look like. I have supported the implementation of the Uluru Statement from the Heart and played my small part supporting the “yes” vote at my university and with my family and community.</p> <h2>How opinions have differed</h2> <p>Debates around the Voice have presented three competing narratives to the Australian public.</p> <p>The “yes” position addresses the outstanding business of the place of First Peoples in the life of the nation. This position is an offer of peace, to walk together towards settlement. It also believes that if First Peoples are able to work with and through government – with power devolved to local-level decision-making – the everyday experiences of the disadvantaged will be changed.</p> <p>The Voice proposal is a modest, middle path. It’s a compromise position that was believed to have the greatest chance of gaining support from progressives, liberals and conservatives.</p> <p>The “no” position refuses to acknowledge the unique place of First Peoples in the life of the nation and rejects any perceived “special treatment” based on either disadvantage or cultural difference.</p> <p>A third, minority group is the so-called “progressive no” vote, which rejects the Voice referendum as an unacceptable compromise with limited utility as a mechanism to advance First Peoples’ rights. It argues Voice is not enough, and it’s time instead for recognition of sovereignty.</p> <p>Each of these narratives draws from competing versions of the story of the nation’s past and future. We can see that understanding our history is more important than ever in addressing the politics of disruption and disinformation and the toxic social and political discourse that has dominated the campaign.</p> <h2>Right-wing tactics of division</h2> <p>Debate over the referendum has played out in a different way to other referendums and general election campaigns. The debate has often been discourteous, relying on a swarm of cruel, derogatory and racist social media posts. Some leading “no” campaigners have <a href="https://www.theguardian.com/australia-news/2023/sep/28/we-forgive-but-never-forget-yes-campaigner-rachel-perkins-responds-to-warren-mundine-on-uluru-statement">presented</a> increasingly extremist and sensational views intended to dominate the news cycle and social media.</p> <p>In many ways, the “no” campaign has followed patterns of right-wing campaigning from overseas, which is intended to destabilise the social relations, trust and confidence we have in one another and seed division.</p> <p>Consider the Brexit debate in the UK, and or US Capitol insurrection and claims of a stolen election by former President Donald Trump. Each provided a platform for people to express white nationalist sentiments and their deep distrust in the institutions of democratic government.</p> <p>The “no” campaign’s tactics have also sought to <a href="https://epress.lib.uts.edu.au/journals/index.php/mcs/article/view/8813">link</a> a host of disparate themes to the referendum, from climate change denial to anti-vaccination beliefs. The common theme is grievance against the perceived extension of the distrusted government into people’s lives. Disinformation has played a key role.</p> <p>Other concerns have also been publicly raised about the Voice, such as that it would be a risk to <a href="https://theconversation.com/no-the-voice-to-parliament-would-not-force-people-to-give-up-their-private-land-212784">people’s private land</a>. These concerns are sincerely feared, but totally unfounded.</p> <h2>Difficulties confronting our history</h2> <p>What sits beneath this right-wing rhetoric in Australia is the highly charged debate over the nation’s past and its future.</p> <p>Contesting views about Australia’s history should not come as a surprise. Since historians became more interested in the telling of Australian history “from the other side” and writing First Peoples back into the nation’s story, it has been met with an equal measure of resistance and shock.</p> <p>The ongoing difficulty of “coming to terms” with colonial histories can be attributed to a number of things:</p> <ul> <li> <p>historical amnesia, disbelief or cultural differences over what counts as historical knowledge</p> </li> <li> <p>the strategic use of “forgetting” to protect a social group’s self-image</p> </li> <li> <p>and the belief that engaging in these difficult histories is somebody else’s responsibility rather than our own.</p> </li> </ul> <p>The Voice Referendum and Uluru Statement introduce a new nationalism underpinned by a different origin story: the process of a settlement between First Nations and non-Indigenous Australians with a recognition of how our continent’s much deeper history can be a gift, or inheritance, to all Australians.</p> <p>In this vision for the future, the worlds of Aboriginal and Torres Strait Islanders narrate the story of the country over much longer timeframes through an entirely different archive and knowledge system.</p> <p>The idea of inheritance of a much deeper and longer history of country is less concerned with colonial settler-Indigenous relations. Rather, it is a transformed sense of history that extends over thousands of generations and speaks to place.</p> <h2>Playing a role in the future of the nation</h2> <p>The aim of the Voice is to strengthen democracy by meaningfully engaging with those who have the knowledge and expertise, in local conditions and contexts, to improve government decisions in Indigenous policy and programs.</p> <p>The Voice proposal eschews a rights framework in favour of <a href="https://www.mup.com.au/books/its-our-country-paperback-softback">providing</a></p> <blockquote> <p>the impetus for a profound paradigmatic shift between Indigenous peoples and the state. While this “power of influence” on one hand seeks to improve policy and programs and services on the ground, it also seeks to shape a new and meaningful relationship between Indigenous Peoples and political institutions.</p> </blockquote> <p>There is a legitimate and important role for government to play in First Peoples’ lives, but this role can be improved by greater participation and local-level input in the design and implementation of policy and programs.</p> <p>For too long, First Peoples have experienced the worst excesses of government and its various instruments – namely the police and judiciary. There’s a reason why many people hold a deep and abiding fear and suspicion of government. It has been responsible for many traumas:</p> <ul> <li> <p>the brutal dislodging of kinship connections</p> </li> <li> <p>the taking of land without any legal basis or compensation</p> </li> <li> <p>the violent dispersal of people from their land, which has rendered many destitute and without means to care for their families</p> </li> <li> <p>the removal of people’s children, denial of basic services and assistance, and management of people’s lives by a cruel and underfunded protection board</p> </li> <li> <p>the <a href="https://www.monash.edu/law/research/centres/castancentre/our-areas-of-work/indigenous/the-northern-territory-intervention/the-northern-territory-intervention-an-evaluation/what-is-the-northern-territory-intervention">empowering</a> of police and military to seize people’s community assets.</p> </li> </ul> <p>And yet, the Voice referendum, supported by the overwhelming majority of First Peoples, seeks to improve the relationship with governments to achieve greater efficiency and effectiveness of policies intended to improve lives.</p> <p>At one Sydney “yes” rally, we walked from Redfern Park along Cleveland Street to Victoria Park. It was a massive turnout that far exceeded expectations. The mood was serious, yet joyous. People came from all over Sydney and brought their place with them – the crew from “The Shire” got a big cheer from the crowd.</p> <p>This gathering was not looking for division, but rather a heart-filled yearning to come together as a community of people and play a role in the future of a nation that’s accepting of the fact it’s our country, too.<!-- Below is The Conversation's page counter tag. "Possibly carcinogenic to humans": WHO's dire warning over common ingredient

<p dir="ltr">The World Health Organisation (WHO) has called for one of the world’s most popular artificial sweeteners to be declared a possible carcinogen. </p> <p dir="ltr">The push will be led by the WHO’s research team for the International Agency for Research on Cancer (IARC), pitting it against the food industry and regulators.</p> <p dir="ltr">The sweetener, known as Aspartame, is used in products from Coca-Cola diet drinks, such as Diet Coke and Coke Zero, to Mars’ Extra chewing gum and some Snapple drinks.</p> <p dir="ltr">Later this month, the IARC will list Aspartame for the first time as “possibly carcinogenic to humans”</p> <p dir="ltr">The ruling from the IARC has assessed whether the sweetener is hazardous to humans or not, although it does not stipulate how much of the product a person can safely consume. </p> <p dir="ltr">This advice for individual consumers comes from a different organisation, known as JECFA (the Joint WHO and Food and Agriculture Organisation’s Expert Committee on Food Additives), who make consumption guidelines alongside national regulators. </p> <p dir="ltr">Despite the claims from the WHO, since as early as 1981 JECFA has said aspartame is safe to consume within accepted daily limits.</p> <p dir="ltr">An adult weighing 60kg would have to drink between 12 and 36 cans of diet soft drink, depending on the amount of aspartame in the beverage, every day to be at risk.</p> <p dir="ltr">Its view has been widely shared by national regulators, including in the United States and Europe.</p> <p dir="ltr">These conflicting reports have angered some regulators and consumers alike, with Japan’s Ministry of Health, Labour and Welfare official Nozomi Tomita writing to the WHO, “kindly asking both bodies to coordinate their efforts in reviewing aspartame to avoid any confusion or concerns among the public.”</p> <p dir="ltr"><em>Image credits: Getty Images</em></p>

‘Good soup is one of the prime ingredients of good living’: a (condensed) history of soup, from cave to can

<p><a href="https://theconversation.com/profiles/garritt-c-van-dyk-1014186">Garritt C Van Dyk</a>, <em><a href="https://theconversation.com/institutions/university-of-newcastle-1060">University of Newcastle</a></em></p> <p>Hot soup on a cold day brings warmth and comfort so simple that we don’t think too much about its origins. But its long history runs from the Stone Age and antiquity through to modernity, encompassing the birth of the restaurant, advances in chemistry, and a famous pop art icon.</p> <p>The basic nature of soup has a fundamental appeal that feels primordial – because it is.</p> <p><a href="https://www.academia.edu/12384834/2015_Speth_When_Did_Humans_Learn_to_Boil_">Archaeologists</a> speculate the first soup might have been made by Neanderthals, boiling animal bones to extract fat essential for their diet and drinking the broth. Without the fats, their high intake of lean animal meats could have led to protein poisoning, so stone age soup was an important complement to primeval nutrition.</p> <p>The fundamental benefit of these bone broths is confirmed by archaeological discoveries around the world, ranging from a gelatin broth in <a href="https://www.archaeology.org/issues/317-1811/trenches/7056-trenches-egypt-giza-livestock-bones">Egypt’s Giza plateau</a>, to <a href="https://www.bbc.com/news/world-asia-pacific-11981666">Shaanxi Province</a> in China.</p> <p>The widespread distribution of archaeological finds is a reminder soup not only has a long history, but is also a global food.</p> <p>Today, our idea of soup is more refined, but the classic combination of stock and bread is embedded in the Latin root of the verb <em>suppāre</em>, meaning “to soak”.</p> <p>As a noun, <em>suppa</em> became <em>soupe</em> in Old French, meaning bread soaked in broth, and <em><a href="https://quod.lib.umich.edu/m/middle-english-dictionary/dictionary/MED41830/track?counter=1&amp;search_id=24326280">sowpes</a></em> in Middle English. This pairing was also an economical way of reclaiming stale bread and thickening a thin broth. Wealthier households might have toasted fresh bread for the dish, but less prosperous diners used up stale bread that was too hard to chew unless softened in the hot liquid.</p> <h2>From rustic to creamy</h2> <p>New ideas about science and digestion in 17th century France promoted <a href="https://www.researchgate.net/publication/340977432_The_Transformative_Influence_of_La_Varenne's_Le_Cuisinier_Francois_1651_on_French_Culinary_Practice">natural flavours</a> and thick, rustic preparations gave way to the creamy and velvety smooth soups we know today.</p> <figure class="align-center zoomable"><a href="https://images.theconversation.com/files/527415/original/file-20230522-21-dcc0ot.jpg?ixlib=rb-1.1.0&amp;q=45&amp;auto=format&amp;w=1000&amp;fit=clip"><img src="https://images.theconversation.com/files/527415/original/file-20230522-21-dcc0ot.jpg?ixlib=rb-1.1.0&amp;q=45&amp;auto=format&amp;w=754&amp;fit=clip" sizes="(min-width: 1466px) 754px, (max-width: 599px) 100vw, (min-width: 600px) 600px, 237px" srcset="https://images.theconversation.com/files/527415/original/file-20230522-21-dcc0ot.jpg?ixlib=rb-1.1.0&amp;q=45&amp;auto=format&amp;w=600&amp;h=450&amp;fit=crop&amp;dpr=1 600w, https://images.theconversation.com/files/527415/original/file-20230522-21-dcc0ot.jpg?ixlib=rb-1.1.0&amp;q=30&amp;auto=format&amp;w=600&amp;h=450&amp;fit=crop&amp;dpr=2 1200w, https://images.theconversation.com/files/527415/original/file-20230522-21-dcc0ot.jpg?ixlib=rb-1.1.0&amp;q=15&amp;auto=format&amp;w=600&amp;h=450&amp;fit=crop&amp;dpr=3 1800w, https://images.theconversation.com/files/527415/original/file-20230522-21-dcc0ot.jpg?ixlib=rb-1.1.0&amp;q=45&amp;auto=format&amp;w=754&amp;h=566&amp;fit=crop&amp;dpr=1 754w, https://images.theconversation.com/files/527415/original/file-20230522-21-dcc0ot.jpg?ixlib=rb-1.1.0&amp;q=30&amp;auto=format&amp;w=754&amp;h=566&amp;fit=crop&amp;dpr=2 1508w, https://images.theconversation.com/files/527415/original/file-20230522-21-dcc0ot.jpg?ixlib=rb-1.1.0&amp;q=15&amp;auto=format&amp;w=754&amp;h=566&amp;fit=crop&amp;dpr=3 2262w" alt="People line up for soup" /></a><figcaption><span class="caption">The Soup Kitchen, Antonio de Puga, ca. 1630.</span> <span class="attribution"><span class="source">Museo de Arte de Ponce</span></span></figcaption></figure> <p>New versions of the liquid food were developed by early modern European chefs, such as the <a href="https://archive.org/details/lenouveaucuisini01mass/page/138/mode/2up">seafood bisque</a>, extracting flavour from the shells of crustaceans.</p> <p>The first restaurant as we understand them today opened in Paris in 1765, and was immortalised for a <a href="https://gallica.bnf.fr/ark:/12148/bpt6k9785063s/f167.item.r=sante">simple broth</a>, a clear soup made from bone broth and fresh herbs.</p> <p><a href="https://www.rebeccalspang.org/invention-of-the-restaurant">Mathurin Roze de Chantoiseau</a>, the original French restaurateur, created a new type of public space where weary diners could regain their lost appetites and soothe their delicate nerves at all hours.</p> <p>It may appear to be a contradiction that the first restaurant specifically catered to clients who had lost their appetites, yet it seems perfectly natural soup was the cure.</p> <h2>Easy and affordable</h2> <p>Soup was not destined to be limited to fancy restaurants or the long simmering stock pots of peasants. Modern science made it convenient and less expensive for home cooks.</p> <p>In 1897, a chemist at the Campbell soup company, John Dorrance, developed a <a href="https://www.campbellsoupcompany.com/about-us/our-story/campbell-history/">condensed canned soup</a> that dramatically reduced the water content. Winning the prize was an achievement considering the competition at the world fair. The other technological advances exhibited at the turn of the century included the diesel engine, “talking” films, dry cell batteries and the Paris Metro.</p> <p>The bronze medallion from 1900 still appears on the iconic red and white label, made famous by pop artist Andy Warhol’s <a href="https://www.moma.org/learn/moma_learning/andy-warhol-campbells-soup-cans-1962/">32 Campbell Soup Cans</a> (1962).</p> <p>In his work, Warhol appropriated images from consumer culture and the media ordinary people would instantly recognise, from Coca-Cola bottles to Marilyn Monroe. In his famous soup painting, 32 canvases – one for each flavour of soup – are lined up like cans on a supermarket shelf.</p> <p>Some <a href="https://warhol.netx.net/portals/warhol-exhibitions/#asset/108496">interpretations</a> consider this a commentary on the link between art and consumerism, emphasising the ordinary quality of the everyday object. The artist may also have been influenced by his personal eating habits – he claimed he had <a href="https://whitney.org/collection/works/5632">soup for lunch</a> every day for 20 years.</p> <h2>‘One of the prime ingredients of good living’</h2> <p>A steady diet of soup is not guaranteed to inspire famous art, but its appeal is universal. Soup can be humble or fancy, cutting across cultures and classes.</p> <p>Deceptively simple, the warmth and comfort of soup provide a temporary refuge from the winter chill, comforting the diner from the inside.</p> <p>The French chef Auguste Escoffier, famous for enshrining the five basic “<a href="https://www.escoffieronline.com/our-guide-to-escoffiers-5-mother-sauces/">mother sauces</a>” in French cuisine, raised soups to perfection in the early 20th century, developing refined preparations that remain classics today.</p> <p>Escoffier, <a href="https://books.google.com.au/books/about/Escoffier.html?id=JFIDd639wlQC&amp;redir_esc=y">known as</a> “the king of chefs and the chef of kings”, had very <a href="https://www.google.com.au/books/edition/A_Guide_to_Modern_Cookery/KCbkcXHj7qoC?hl=en&amp;gbpv=1&amp;dq=escoffier+guide+culinaire&amp;printsec=frontcover">high standards</a> for soup, claiming “of all the items on the menu, soup is that which exacts the most delicate perfection”.</p> <p>An Austrian apprentice of Escoffier, Louis P. De Gouy, was chef at the Waldorf Astoria for 30 years and wrote 13 cookbooks.</p> <p>He summed up the appeal of soup in a <a href="https://www.google.com.au/books/edition/The_Soup_Book/1tNmDwAAQBAJ?hl=en&amp;gbpv=1&amp;printsec=frontcover">volume</a> dedicated to the dish with over 700 recipes:</p> <blockquote> <p>Good soup is one of the prime ingredients of good living. For soup can do more to lift the spirits and stimulate the appetite than any other one dish.</p> </blockquote> <p>From Neanderthal broth to pop art icon, this humble pantry staple has a rich and vibrant history, giving us both nourishment and food for thought.<!-- Below is The Conversation's page counter tag. When someone living with dementia is distressed or violent, ‘de-escalation’ is vital

<p><em><a href="https://theconversation.com/profiles/steve-macfarlane-4722">Steve Macfarlane</a>, <a href="https://theconversation.com/institutions/monash-university-1065">Monash University</a></em></p> <p>Today’s <a href="https://www.abc.net.au/news/2023-05-18/cooma-aged-care-home-police-woman-in-hospital-taser/102361018">reporting</a> about the alleged tasering of a 95-year-old woman living at the Yallambee Lodge aged care home in New South Wales has brought the issue of behaviours and psychological symptoms of dementia into <a href="https://www.abc.net.au/news/2023-05-19/advocates-say-taser-clare-nowland-shows-aged-system-failure-/102365442">sharp focus</a>.</p> <p>Over half of those living in residential care <a href="https://www.aihw.gov.au/reports/dementia/dementia-in-aus/contents/aged-care-and-support-services-used-by-people-with-dementia/residential-aged-care">have a dementia diagnosis</a> and up to 95% of those living with dementia will <a href="https://www.ncbi.nlm.nih.gov/books/NBK551552/#:%7E:text=Behavioral%20and%20psychological%20symptoms%20of,%2C%20and%20caregiver%20well%2Dbeing.">experience such behaviours</a> at some point during their passage through the illness. Common behaviours that might be shown by those living with advanced dementia include agitation, anxiety, attempts to leave care, aggression, apathy, sleep disturbance, aimless pacing, psychosis and aggression.</p> <p>The full circumstances surrounding Wednesday’s events are unclear and they are subject to an <a href="https://www.abc.net.au/news/2023-05-19/advocates-say-taser-clare-nowland-shows-aged-system-failure-/102365442">investigation</a> by police. That may take some time. What is clear, however, is that there is much room for improvement in the way behaviours and psychological symptoms of dementia are managed in residential care. Situations that end with police involvement should be avoided.</p> <h2>Calling for help</h2> <p>In its final report in March 2021, the <a href="https://agedcare.royalcommission.gov.au/">Royal Commission into Aged Care Quality and Safety</a> <a href="https://agedcare.royalcommission.gov.au/sites/default/files/2021-03/final-report-recommendations.pdf">recommended</a> “all workers engaged by providers who are involved in direct contact with people seeking or receiving services in the aged care system undertake regular training about dementia care and palliative care”.</p> <p>Currently, it is not infrequent for police to be called to respond to incidents in care homes. While programs have been implemented to better equip police to respond to the specific need of those <a href="https://www.nationaltribune.com.au/police-and-psos-better-equipped-to-support-people-living-with-dementia/">living with dementia</a> this work is still in its infancy.</p> <p>Aggression and agitation are two of the most common behavioural symptoms that lead to referral to specialist support services.</p> <p>Dementia Support Australia is a Commonwealth-funded service that has supported aged care homes and home-based carers in managing behaviours and psychological symptoms of dementia since 2016. There were <a href="https://www.aihw.gov.au/reports/dementia/dementia-in-aus/contents/aged-care-and-support-services-used-by-people-with-dementia/dementia-support-australia">8,702 referrals</a> to the service between January and June 2022. The number of referrals has increased in recent years.</p> <p>As an organisation at the frontline of dementia support, we extend our deepest sympathies to the 95-year-old aged care resident, her family, Yallambee Lodge staff and everyone else touched by this devastating incident.</p> <p>One of the advantages of having a national service such as this is that it has enabled the development of a national database that documents not only the nature and severity of the behaviours prompting the referral, but those factors that are most commonly identified as triggers for these behaviours.</p> <h2>3 leading causes</h2> <p>Aggression and agitation are not diagnoses in themselves, but symptoms. Symptoms have causes, and these must be identified in order to adequately address behaviour.</p> <p>The leading contributing factors we have identified in relation to behaviours are:</p> <p><strong>1. Unidentified or under-treated pain</strong></p> <p>This is relevant in over 50% of the cases we see. Earlier research on pain management in the setting of advanced dementia has shown those with a dementia diagnosis who are admitted to hospital with hip fractures tend to be prescribed only a fraction of the analgesia given to <a href="https://pubmed.ncbi.nlm.nih.gov/10799790/">those without dementia</a>.</p> <p><strong>2. Carer approach</strong></p> <p>Care staff receive only minimal levels of training in dementia care as part of their basic qualification and are often unfamiliar with communication strategies tailored towards those with cognitive impairment.</p> <p>Currently, the minimum qualification for a personal care worker involves no compulsory units in <a href="https://www.dementia.org.au/about-us/news-and-stories/news/are-aged-care-workers-required-have-dementia-training">dementia competency</a>. While we do not know the full circumstances from the events this week, the Royal Commission has made recommendations to improve care for those living with dementia. Carer approach is an issue in about a third of the cases we see.</p> <p><strong>3. Over- and under-stimulation</strong></p> <p>In about one quarter of Dementia Support Australia cases boredom and loneliness and/or an environment that does not take into account the specific needs of those living with dementia are an issue.</p> <p>Other common causes of changed behaviour include mood and anxiety disorders, communication difficulties, <a href="https://theconversation.com/what-is-delirium-194631">delirium</a>, sleep problems and poor carer knowledge of the specific likes/dislikes of the individuals they are caring for.</p> <figure><iframe src="https://www.youtube.com/embed/WE65yrnsrPk?wmode=transparent&amp;start=0" width="440" height="260" frameborder="0" allowfullscreen="allowfullscreen"></iframe><figcaption><span class="caption">People with dementia may react to uncertainty in unexpected ways.</span></figcaption></figure> <h2>Prevention and calming things down</h2> <p>The best way to manage most behavioural changes is to prevent the circumstances that lead to their development in the first place. Prevention is always better than cure.</p> <p>Once behaviours are occurring, there is no single correct way to <a href="https://www.dementia.org.au/national/support-and-services/carers/behaviour-changes/aggressive-behaviours">de-escalate</a> them. The appropriate de-escalation strategies will always be specific to what has caused the altered behaviour in the first place.</p> <p>Unfortunately, when behaviours have escalated to the point where police attendance is required, the responding officers are unlikely to be equipped with the necessary information about the person and their circumstances. That means they won’t be equipped to respond with effective and specific de-escalation strategies.</p> <p>One case in the United States from 2020 involved the arrest of a 73-year-old woman living with dementia, who had left a local store without paying for items <a href="https://edition.cnn.com/2021/04/27/us/loveland-police-officers-video-use-of-force/index.html">worth a small amount</a>. A <a href="https://edition.cnn.com/2021/04/16/us/loveland-lawsuit-use-of-force-arrest/index.html">lawsuit</a> filed following the arrest alleged it resulted in a fractured arm and a dislocated shoulder, and raised national concerns about the way first responders interact with those experiencing cognitive disabilities.</p> <p>Australia needs to learn from yesterday’s events and respond.</p> <p><em>If you are caring for someone with dementia there is help available. <a href="https://www.dementia.com.au/">Dementia Support Australia</a> is a free service, fully funded by the Australian government. “Lunch-box-mum queen”: Woman goes viral over 2 ingredient cake mix

<p dir="ltr">One Coles shopper has taken the internet by storm, revealing a “snack hack” with just two ingredients.</p> <p dir="ltr">Aussie mum-of-three Claudia creates content on TikTok on cheap Kmart buys, a day in the life of her family, and her most popular videos, her “snack hacks”.</p> <p dir="ltr">For her most recent hack, only two ingredients are required.</p> <p dir="ltr">“Snack hack! Again!” she said in the video, which has attracted more than 70,000 views on TikTok.</p> <p dir="ltr">“So, this one, I’m looking forward to.</p> <p dir="ltr">“This is not healthy. This is two ingredients — Nutella and eggs — and it’s supposed to make the gooiest, chocolatiest, yummiest cake ever.</p> <p dir="ltr">“I have not tried this before so let’s get to it.”</p> <p dir="ltr">Claudia didn’t have Nutella in her pantry, but she bought the Coles version, which she claims tastes very similar.</p> <p dir="ltr">“I’m a big believer in using what you have, but a few people said ‘check this out, make this, it’s delicious’ so I just had to,” she continued.</p> <p dir="ltr">“I did go and buy the Coles one, and it was very cheap, and I’m sure a lot of people do have Nutella in their cupboard.”</p> <p dir="ltr">For the snack hack, Claudia used one cup of the chocolate spread and four eggs to create a gooey cake mix.</p> <p dir="ltr">“If ‘trust the process’ had a cover photo, it would be this,” she said, visibly grossed out by the gooey batter.</p> <p dir="ltr">“It is safe to say I won’t be trying any of this cake mix.”</p> <p dir="ltr">Claudia instructed viewers to put the cake in the oven for 20-25 minutes at 180 degrees Celsius.</p> <p dir="ltr">“Do you know how good this smells?” she said as she took the cake tin out of the oven.</p> <p dir="ltr">She was even more excited by the time she tried it. </p> <p dir="ltr">“That is so good. So, so good. Like no exaggeration. So freaking good,” she said.</p> <p dir="ltr">People flooded the comments, applauding Claudia for another great “snack hack”. </p> <p dir="ltr">“I’m soooo trying this,” one person wrote.</p> <p dir="ltr">“Thank you, lunch-box-mum queen,” another added.</p> <p dir="ltr">“I honestly thought it was going to come out looking like chocolate scrambled eggs,” a third said.</p> <p dir="ltr">Claudia is renowned on TikTok for making snacks that are easy on household budgets, so people were grateful she used the cheaper Coles chocolate spread. </p> <p dir="ltr">“The Coles Nutella is just as good in my opinion,” one wrote.</p> <p dir="ltr"><em>Image credit: TikTok</em></p>

Five vital questions to ask yourself before booking your next cruise

<p dir="ltr">When it comes to booking your next holiday on the seas, there are a few vital questions to consider before setting sail. </p> <p dir="ltr">It isn't uncommon to be lured in by a seemingly great sale fare, but taking a minute to contemplate the best arrangement for you could stop you making an expensive mistake. </p> <p dir="ltr">Who you go with, where you go, and when you set sail can all greatly impact the quality of your holiday, so ask yourself these questions before you pack your bags. </p> <p dir="ltr"><strong>Who am I travelling with?</strong></p> <p dir="ltr">Picking your travel companions can make or break your holiday, as who you decide to set sail with can drastically change where and when you go. </p> <p dir="ltr">For example if you're travelling with young children, that will rule out most expeditions to Antarctica, as most cruise lines recommend children be at least eight years of age to head to the icy South Pole. </p> <p dir="ltr">If the holiday is a venture for the whole family, most cruise lines advertise which journeys are more kid-friendly, with entertainment onboard for people of all ages.</p> <p dir="ltr"><strong>Where am I going?</strong></p> <p dir="ltr">While there are many spectacular destinations on every cruise lover's bucket list, there are others that require a little more consideration. </p> <p dir="ltr">Do you prefer something tropical featuring a beach-heavy itinerary or fancy something cool climate with plenty of adventure? What was the last holiday you truly enjoyed and what did you love about it? Do these three popular anti-ageing skincare ingredients work? Here’s what the evidence says

<p>For people looking to press pause on ageing, it hasn’t always been as easy as it is today. Throughout history people have used all sorts of outlandish anti-ageing skincare techniques – such as <a href="https://www.mcgill.ca/oss/article/science-science-everywhere-you-asked/why-did-cleopatra-supposedly-bathe-sour-donkey-milk">bathing in donkey’s milk</a> as Cleopatra supposedly did, or <a href="https://thedermreview.com/elizabethan-beauty-and-skin-care/">applying mercury</a> directly to the skin, as the Elizabethans did.</p> <p>While the modern era has certainly seen its fair share of bizarre anti-ageing skincare methods – such as <a href="https://www.marieclaire.com/beauty/news/a14382/anti-aging-beauty-through-history/">placenta and vampire facials</a> – the latest trend in anti-ageing skincare is using science.</p> <p>But with ingredients such as peptides, antioxidants and acids now commonplace in ingredients lists, it can be difficult for someone without a background in biology or chemistry to know if what they’re putting in their basket really is backed by science – or if it’s just clever marketing hype. </p> <p>Here, we take a look at three of the most popular ingredients currently found in many anti-ageing products – and whether there’s any evidence they do what they claim.</p> <h2>Vitamin C</h2> <p>Products containing vitamin C often claim that it “brightens” the skin’s appearance and encourages collagen production. The middle layer of our skin (the dermis) produces both collagen and elastin, which work together to give the skin its <a href="https://parjournal.net/article/view/3863">stiffness and elasticity</a>. But as we get older, the skin produces less collagen and elastin – which is why we develop wrinkles.</p> <p>Vitamin C is a bit tricky to deliver to the skin. This is because the outermost layer of the skin, the epidermis, acts as a barrier to water. Since vitamin C is water soluble, this can make it difficult to develop a product that is able to <a href="https://www.ncbi.nlm.nih.gov/pmc/articles/PMC5579659/">get vitamin C into the skin</a>. </p> <p>But some research does suggest that concentrations above 5% of vitamin C may work on the skin. For example, one study found that in ten women aged 50-60, applying a cream containing 5% vitamin C to the forearms daily for six months showed an <a href="https://www.sciencedirect.com/science/article/pii/S0022202X15412564">increase in collagen production</a> in the skin. </p> <p><a href="https://jcadonline.com/february-2019-vitamin-c/">Other research</a> also suggests that vitamin C applied to the skin daily can noticeably reduce hyperpigmentation (patches of skin that are slightly darker) caused by sun damage. In multiple studies, creams with and without vitamin C were applied to different areas of skin on each person. It was found that people who used vitamin C creams for a total of 47 days saw a noticeable difference in the colour of their skin after 12 days of use. However, there was little further change after the first 12 days.</p> <p>However, it’s unknown if the results persisted after the study was finished.</p> <h2>Hyaluronic acid</h2> <p>Hyaluronic acid is a natural substance that our body makes. It’s usually found in the fluids in the eyes and between the joints and tissues. Many skincare products now include hyaluronic acid, claiming it’s a good skin moisturiser which may help reduce wrinkles. </p> <p>A 2011 study, which looked at 76 women aged between 30 and 60, found that using creams containing 0.1% of hyaluronic acid twice daily for two months improved <a href="https://pubmed.ncbi.nlm.nih.gov/22052267/">skin hydration and elasticity</a>. But improvements to the appearance of wrinkles and skin roughness was only seen in creams where the hyaluronic acid molecules were smaller in size. This is because hyaluronic acid molecules that are larger can be <a href="https://onlinelibrary.wiley.com/doi/10.1111/srt.12228">more difficult for the skin to absorb</a>. </p> <p>But many high street skin creams containing hyaluronic acid don’t tell you the exact size of the molecules used in the product – making purchasing decisions difficult. It’s worth reading the label and taking note of the type and/ or concentration of hyaluronic acid it contains.</p> <p>Reassuringly, <a href="https://www.sciencedirect.com/science/article/pii/S014181301833770X?via%3Dihub">other studies</a> have shown that many hyaluronic acid products (from creams and serums to injectables) can help increase skin hydration and reduce wrinkles – including a <a href="https://link.springer.com/article/10.1007/s13555-021-00566-0">2021 study</a>, which showed a significant increase in skin hydration and reduction in fine lines in participants. But it’s worth noting this study used a commercial product that contained a blend of niacinamide, ceramides and hyaluronic acid applied twice a day, alongside daily sunscreen use. This makes it difficult to know if the results were solely because of hyaluronic acid. </p> <h2>Retinol</h2> <p>Retinol-based products are popular these days, often promoted for their ability to reduce the effects of long-term sun damage to the skin (photoageing) – including hyperpigmentation and wrinkling. </p> <p>Retinol is a derivative of vitamin A. It’s converted to retinoic acid once it’s absorbed into the skin. Once absorbed, it helps increase collagen production and increases cell turnover. All of these effects combined help plump out the appearance of wrinkles and decrease hyperpigmentation. </p> <p>Studies in <a href="https://pubmed.ncbi.nlm.nih.gov/8757759/">humans cells</a>, <a href="https://pubmed.ncbi.nlm.nih.gov/9517919/">skin samples</a> and humans all suggest products containing retinol can have an effect on the skin’s appearance. For example, one study in humans showed using a product with <a href="https://pubmed.ncbi.nlm.nih.gov/17515510/">at least 0.4% retinol</a> three times a week for six months did decrease the appearance of wrinkles. <a href="https://pubmed.ncbi.nlm.nih.gov/27332694/">Previous studies</a> have shown even products containing 0.04% retinol can have this effect when used for at least 12 weeks.</p> <p>While the effects will not be as pronounced when compared to other prescription-grade retinoid products, commercial products containing at least 0.04% retinol should be able to reduce the appearance of fine wrinkles with continued used over a period of months especially when combined with <a href="https://www.nhs.uk/live-well/seasonal-health/sunscreen-and-sun-safety/">sun protection</a>. </p> <h2>What to look for</h2> <p>If you’re considering buying an anti-ageing skincare product, there are a few things to think about.</p> <p>First, consider whether you may be allergic to any of the ingredients in the product and whether it’s suitable for your skintype. For example, if you have dry, sensitive skin, retinol may not be suitable for you as it can increase your skin’s sensitivity to sunlight and irritate it further. You should also take note of the concentration of the active ingredient within the product and follow the recommended use advised by the manufacturer. This will be stated on the label.</p> <p>Of course, you also need to remember the product you have bought is not a cure-all. Surprise twist in traveller who failed to declare sandwich ingredients

Vital clue emerges in search for missing nine-year-old

7 harmful beauty product ingredients that you should swap out

<p><strong>How harmful are your beauty products?</strong></p> <p><span>A study found there are as many as 126 potentially harmful ingredients in the average adult’s daily beauty routine. </span></p> <p><span>From synthetics in your shampoo to chemicals in your concealer, find out which ingredients you should swap out and why.</span></p> <p><strong>Fragrance</strong></p> <p>“If you only change one thing in your beauty routine, the ingredient you should avoid is fragrance,” says Lindsay Coulter, the David Suzuki Foundation’s resident green living expert.</p> <p>Fragrance isn’t just in colognes or perfumes; in fact, it’s added to everything from body wash to shampoo to face creams. Even unscented products can contain fragrance compounds that act as masking agents.</p> <p>“It shows up as one word [on the ingredients label], but it can be a concoction of hundreds of different ingredients,” Coulter explains.</p> <p>According to research published by the Canadian Cosmetic, Toiletry and Fragrance Association, these anonymous chemical compounds can trigger allergies and asthma, cause hormone disruption, and in many cases, are harmful to fish and other wildlife after they get washed down the drain.</p> <p>Not ready to give up smelling pretty? There are still plenty of green alternatives, says naturopath Jen Newell. “I recommend that people opt for products with essential oils or other natural scents,” Newell says.</p> <p><strong>Parabens</strong></p> <p><span>Parabens are preservatives that can be found in everything from makeup to moisturisers to fragrances. Problem is, numerous studies have shown that these chemicals – which are easily absorbed through the skin – have the potential to interfere with hormone function and have been linked with breast cancer. </span></p> <p><span>How do you rid your beauty routine of this particularly harmful ingredient? Keep an eye out for products that are labelled “paraben-free,” and study the ingredient list carefully, as these pesky preservatives can be listed in different ways, including “methylparaben” or “propylparaben.”</span></p> <p><strong>Triclosan</strong></p> <p>Triclosan is an antibacterial agent that can be found in antibacterial soaps, body washes, hand sanitisers, toothpaste and mouthwash.</p> <p>The issue with triclosan, Coulter says, is that it kills all bacteria – good and bad. Although this ingredient is not yet regulated in Australia, the Food and Drug Administration in the United States banned its use in September 2016 on the grounds that it could pose health risks, including bacterial resistance and hormonal effects.</p> <p>The good news? It’s easy to steer clear of this harmful ingredient, as triclosan is listed on product labels.</p> <p>For an alternative to triclosan, Coulter suggests alcohol-based sanitisers or old-fashioned castile soap and water.</p> <p><strong>Sodium lauryl sulphate</strong></p> <p><span>Sodium lauryl sulphate (SLS, sometimes also known as SLES) is a chemical additive that makes super-foamy bubbles and suds. </span></p> <p><span>It’s often listed as a main ingredient in soap, shampoo, face wash and dish soaps, says Coulter. The reason that SLS should be avoided is that it can be contaminated with ethylene oxide, which the International Agency for Research on Cancer lists as a known human carcinogen (cancer-causing chemical). </span></p> <p><span>Check your soaps for this ingredient before purchasing and don’t fret if the SLS-free product you try doesn’t produce a rich lather like your old shampoo or body wash. </span></p> <p><span>A lack of suds doesn’t mean it’s not doing its job, says Coulter; it simply means you’re skipping out on a harmful chemical.</span></p> <p><strong>Phthalates</strong></p> <p>Phthalates are commonly found in fragrance compounds, says Newell. Research suggests they can disrupt hormones during critical periods of human development (such as a baby’s development in utero) and they’ve also been associated with male infertility.</p> <p>If you’re having trouble identifying which products might contain harmful ingredients such as phthalates, Newell recommends downloading the Think Dirty App to your smartphone.</p> <p>It allows you to scan the bar codes of the products in your daily beauty regimen, and then assesses their degree of safety.</p> <p><strong>Oxybenzone</strong></p> <p><span>Oxybenzone is the active ingredient in many popular sunscreens, but Newell recommends avoiding it when possible – and for good reason. </span></p> <p><span>According to a study published in the </span><em>International Journal of Andrology</em><span>, oxybenzone has been linked to skin reactions and it may even disrupt hormones. </span></p> <p><span>There have also been studies indicating that when oxybenzone is exposed to sunlight it can form free radicals that cause skin cell damage. </span></p> <p><span>This doesn’t mean you should skip sunscreen altogether, of course. It’s easy to avoid this chemical if you stick with mineral-based zinc or titanium oxide sunscreens.</span></p> <p><strong>Petrolatum</strong></p> <p>Petrolatum or petroleum jelly is often used in moisturisers, lip balms and hair products because it acts as a moisture barrier and creates a sheen.</p> <p>The David Suzuki Foundation lists petrolatum as one of its “Dirty Dozen” harmful ingredients to avoid, as it can be contaminated with polycyclic aromatic hydrocarbons (PAHs), which the European Union lists as a carcinogen.</p> <p>If you want to skip petrolatum just to be on the safe side, try organic coconut oil or shea butter to moisturise your skin.</p> <p>If you’re feeling overwhelmed when it comes to “greening” your beauty routine, begin the transition slowly. “Start with the products you use most often and then eventually replace those items that you only use every once in a while,” recommends Newell.</p> <p><em>Image credits: Getty Images</em></p> <p><em>This article originally appeared on <a rel="noopener" href="https://www.readersdigest.com.au/healthsmart/beauty/7-harmful-beauty-product-ingredients-that-you-should-swap-out" target="_blank">Reader's Digest</a>.</em></p>

McDonald's employee reveals secret ingredient

Well one Macca's employee has revealed on TikTok the one ingredient that goes into their famous sauce.</p> <p>In a now deleted TikTok, posted by @maccas_myths it has been shared that the fast-food giant used two types of onions, one of which was used in its burgers for flavour.</p> <p>“At Maccas, we have two of types of onions,” they said.</p> <p>“Large onions which have been cut up and dehydrated onions which are put in water over night.”</p> <p>After soaking them over night, the dehydrated onions are put in shakers and used in the chain’s Big Macs, hamburgers and cheeseburgers, according to the <em>Daily Mail Australia</em>.</p> <p><img style="width: 500px; height: 281.25px;" src="https://oversixtydev.blob.core.windows.net/media/7846287/new-project-5.jpg" alt="" data-udi="umb://media/793f0abb9c5343a0b9c3fb5db5b6f3f0" /></p> <p>Not only do dehydrated onions last longer, but they also have a stronger flavour — something Macca’s fans claimed was what made the restaurant’s burgers taste so good.</p> <p>“Those dehydrated onions hit differently,” one person wrote, while another said: “I rehydrate onion flakes for my burgers at home because my kids say it tastes just like McDonald’s.”</p> <p>“Did not know onions could be dried like that. Common ingredient found to encourage aggressive cancer spread

<p><span style="font-weight: 400;">New research has found that a fatty acid found in palm oil and dairy products contributes to the aggressive nature of tumours and allows them to spread.</span></p> <p><span style="font-weight: 400;">The study from Barcelona’s Institute for Research in Biomedicine (IRB) saw researchers expose samples of mouth and skin cancers to a diet rich in palmitic acid - a major component of palm oil - before transplanting the sample tumours into mice.</span></p> <p><span style="font-weight: 400;">Palm oil is the most widely consumed vegetable oil in the world and can be found in food, beauty products, and detergents, according to the </span><a rel="noopener" href="https://www.worldwildlife.org/pages/which-everyday-products-contain-palm-oil" target="_blank"><span style="font-weight: 400;">World Wildlife Fund</span></a><span style="font-weight: 400;">.</span></p> <p><span style="font-weight: 400;">The team found that the tumours had a greater capacity to metastasize - meaning they were more likely to spread to other parts of the body.</span></p> <p><span style="font-weight: 400;">They also identified that the cancer cells were permanently changed after being exposed to palmitic acid and were able to maintain this improved ability to metastasize months after.</span></p> <p><span style="font-weight: 400;">When they compared palmitic acid to linoleic acid and oleic acid - found in ingredients such as olive oil and linseed oil - the team discovered that palmitic acid was the only one to have any effect on the tumours.</span></p> <blockquote style="background: #FFF; Home gardens vital for pollinators

<h2><strong style="font-size: 14px;">They provide a rich and diverse nectar source, study finds.</strong></h2> <div class="copy"> <p>Urban areas are a surprisingly rich food reservoir for pollinating insects such as bees and wasps, according to a UK study <a rel="noreferrer noopener" href="https://besjournals.onlinelibrary.wiley.com/doi/10.1111/1365-2745.13598" target="_blank">published</a> in the <em>Journal of Ecology</em>.</p> <p>Home gardens are particularly important, the study found, accounting for 85% of the nectar – sugar-rich liquid that provides pollinators with energy – within towns and cities and the most diverse supply overall.</p> <p>Results showed that just three gardens generated on average around a teaspoon of the liquid gold – enough to attract and fuel thousands of pollinators.</p> <p>“This means that towns and cities could be hotspots of diversity of food – important for feeding many different types of pollinators and giving them a balanced diet,” says lead author Nicholas Tew, from the University of Bristol.</p> <p>“The actions of individual gardeners are crucial,” he adds. “Garden nectar provides the vast majority of all. This gives everyone a chance to help pollinator conservation on their doorstep.”</p> <p><a rel="noreferrer noopener" href="https://www.pollinator.org/pollination" target="_blank">Pollinators</a> include bees, wasps, butterflies, moths, bats and beetles. They are critical for ecosystems and agriculture as most plant species need them to reproduce, and <a rel="noreferrer noopener" href="https://citeseerx.ist.psu.edu/viewdoc/download?doi=10.1.1.453.4134&amp;rep=rep1&amp;type=pdf" target="_blank">research suggests</a> their survival relies especially on the diversity of flowering plants.</p> <p>To explore how our sprawling urban areas could support them, Tew’s research group previously led the <a rel="noreferrer noopener" href="http://www.bristol.ac.uk/biology/research/ecological/community/pollinators/" target="_blank">Urban Pollinators Project</a> in collaboration with other universities. They found that cities and gardens – community and private – are vital for pollinators, leading them to question how to quantify and harness this resource.</p> <p>“The gap in our knowledge was how much nectar and pollen urban areas produce and how this compares with the countryside,” Tew explains, “important information if we want to understand how important our towns and cities can be for pollinator conservation and how best to manage them.”</p> <p>So, for the current study, Tew and colleagues measured the supply of nectar in urban areas, farmland and nature reserve landscapes, and then within four towns and cities (Bristol, Edinburgh, Leeds and Reading) to determine how much nectar different land uses produce.</p> <p>To do this, they extracted nectar from more than 3000 flowers comprising nearly 200 plant species using a fine glass tube and quantified it using a refractometer, an instrument that measures how much light refracts when passing through a solution.</p> <p>Then they sourced nectar measurements from other published studies and combined the nectar-per-flower values with numbers of flowers from each species in different habitats as previously measured by the group.</p> <p>Overall, nectar quantity per unit area was similar in urban, farmland and nature reserve landscapes. But urban nectar supply was most diverse, as it was produced by more flowering plant species. And while private gardens supplied similarly large amounts per unit as allotments, they covered more land – nearly a third of towns and cities.</p> <p>It’s important to note the findings are specific to the UK, and maybe parts of western Europe, Tew says. Most urban nectar comes from ornamental species that are not native, which can be attractive to generalist pollinators but may not benefit specialist species that feed from selective native flower species.</p> <p>Thus private gardens in other regions might have different benefits. Australia, for instance, has more endemic species and specialist pollinators than the UK, so while non-natives would still provide some benefit, natives may be more important overall.</p> <p>Most recommendations for attracting pollinators in Australia include supporting native bees and other local specialists. Suggestions include planting more native species and providing <a rel="noreferrer noopener" href="http://www.australianenvironmentaleducation.com.au/australian-animals/australian-pollinator-week/" target="_blank">accommodation</a> for native bees, most of which are solitary species – unlike the familiar, colonial European honeybee.</p> <p>But in general, Tew says home gardeners can all support biodiversity with some key strategies, especially planting as many nectar-rich flowering plants as possible and different species that ensure flowers all year round.</p> <p>Other <a rel="noreferrer noopener" href="https://www.rhs.org.uk/science/conservation-biodiversity/wildlife/plants-for-pollinators" target="_blank">recommendations</a> include mowing the lawn less often to let dandelions, clovers and other plants flower, avoiding <a rel="noreferrer noopener" href="https://cosmosmagazine.com/biology/scientists-call-for-urgent-action-on-bee-killing-insecticides/" target="_blank">pesticides</a> and never spraying open flowers, and covering as much garden area as possible in flowery borders and natural lawns.</p> <!-- Start of tracking content syndication. The vital issue that brought Q+A's host and guest to tears

<p><em>Q&amp;A</em><span> </span>host Hamish Macdonald and Liberal MP were brought to tears on the program after discussing Australia's failing aged care system.</p> <p>Allen ended the show in tears after speaking about her father's battle with dementia.</p> <p>"He couldn't speak for the last year of his life, he couldn't walk, his only words that were left were 'thank you'," Ms Allen said through tears.</p> <p>"It's a terrible disease, so I think people [need to be] able to have the choice, and the control, and the laws in Victoria have been, I think, I have to say well handled and I think that we need to have this sort of conversation, particularly for dementia."</p> <p>Macdonald broke down in tears much later after asking an audience member and his daughter questions about aged-care homes.</p> <p>Audience member Timothy Granger and his daughter Prudence-Rose spoke about Timothy's battle with early-onset Alzheimer's as he was diagnosed at the age of 51.</p> <p>Timothy spoke about his fears about what the future holds for him.</p> <p>"How are you doing?" Macdonald asked.</p> <p>"Going well," Mr Granger responded before adding: "Sorry, I have a little bit of problem with speech, sorry, what was your question?</p> <p>"I wanted to know how you're doing," Macdonald said.</p> <p>"You're living at home with your beautiful wife, your wonderful daughter. How do you feel about the prospect of one day going into an aged care facility?"</p> <p>"I think what makes it scary is he's so much younger," she said.</p> <p>"He's going to be potentially going in there in his 60s or sooner, which we really want to avoid but if that occurs, how can he live his best life in these facilities that aren't really set up for him at his age?</p> <p>"There are more people getting diagnosed with early-onset Alzheimer's."</p> <p>Macdonald asked Timothy how he felt about discussing that with his family.</p> <p>"That's going to be difficult and probably it's going to be hard for them as well," Mr Granger said.</p> <p>"I'm scared. I think it's not something you think is going to happen so soon," Ms Granger added</p> <p>"We would like to be able to support him for as long as we can, the reality is we probably can't.</p> <p>"We also have financial concerns. We'd like to be able to put him in a facility that will support him and his needs but I don't know if he could afford that or if we would get in.</p> <p>"And I'm just witnessing that, especially tonight, listening to everything that everybody is saying and it's really scary."</p> <p>It was here that Macdonald started to cry.</p> <blockquote class="twitter-tweet"> <p dir="ltr">Tim is 56 years old and was diagnosed with early-onset Alzheimer’s five years ago. It is impossible not to be moved by Tim's story.</p> <p>"He's a father, a husband and a lovely human, faced with some extraordinarily difficult circumstances. I'm really pleased there's a space for Tim and people like him to have a voice in such an important national conversation around aged care."</p>

Coronavirus reinfection cases: what we know so far – and the vital missing clues

<p>To date, there have been six published cases of COVID-19 reinfection, with various other unverified accounts from around the world. Although this is a comparably small fraction of the millions of people known to have been infected, should we be concerned? To unpick this puzzle, we must first consider what we mean by immunity.</p> <p><strong>How immunity works</strong><br />When we are infected with any pathogen, our immune system quickly responds to try to contain the threat and minimise any damage. Our first line of defence is from immune cells, known as innate cells. These cells are not usually enough to eliminate a threat, which is where having a more flexible “adaptive” immune response comes into play – our lymphocytes.</p> <p>Lymphocytes come in two main varieties: B lymphocytes, which make antibodies, and T lymphocytes, which include cells that directly kill the germy invaders.</p> <p>As antibodies are readily measured in blood, they are often used to indicate a good adaptive immune response. However, over time, antibodies levels in our blood wane, but this doesn’t necessarily mean protection is lost. We retain some lymphocytes that know how to deal with the threat – our memory cells. Memory cells are remarkably long-lived, patrolling our body, ready to spring into action when needed.</p> <p>Vaccines work by creating memory cells without the risk of a potentially fatal infection. In an ideal world, it would be relatively easy to create immunity, but it’s not always that straightforward.</p> <p>Although our immune system has evolved to deal with a huge variety of pathogens, these germs have also evolved to hide from the immune system. This arms race means that some pathogens such as malaria or HIV are very tricky to deal with.</p> <p>Infections that have spilled over from animals - zoonotic diseases - are also challenging for our immune system because they can be completely novel. The virus that causes COVID-19 is such a zoonotic disease, originating in bats.</p> <p>COVID-19 is caused by a betacoronavirus. Several betacoronaviruses are already common in the human population – most familiar as a cause of the common cold. Immunity to these cold-causing viruses isn’t that robust but immunity to the more serious conditions, Mers and Sars, is more durable.</p> <p>Data to date on COVID-19 shows that antibodies can be detected three months after infection, although, as with Sars and Mers, antibodies gradually decrease over time.</p> <p>Of course, antibody levels are not the only indication of immunity and don’t tell us about T lymphocytes or our memory cells. The virus causing COVID-19 is structurally similar to Sars, so perhaps we can be more optimistic about a more durable protective response – time will tell. So how worried then should we be about reports of reinfection with COVID-19?</p> <p><strong>How worried should we be?</strong><br />The handful of case reports on reinfection with COVID-19 don’t necessarily mean that immunity is not occurring. Issues with testing could account for some reports because “virus” can be detected after infection and recovery. The tests look for viral RNA (the virus’s genetic material), and viral RNA that cannot cause infection can be shed from the body even after the person has recovered.</p> <p>Conversely, false-negative results happen when the sample used in testing contains insufficient viral material to be detected – for example, because the virus is at a very low level in the body. Such apparent negative results may account for cases in which the interval between the first and second infection is short. It is hugely important, therefore, to use additional measures, such as viral sequencing and immune indicators.</p> <p>Reinfection, even in immunity, can happen, but usually this would be mild or asymptomatic because the immune response protects against the worst effects. Consistent with this is that most verified cases of reinfection reported either no or mild symptoms. However, one of the latest verified cases of reinfection – which happened just 48 days after the initial infection – actually had a more severe response to reinfection.</p> <p>What might account for the worse symptoms the second time round? One possibility is the patient did not mount a robust adaptive immune response first time round and that their initial infection was largely contained by the innate immune response (the first line of defence). One way to monitor this would be to assess the antibody response as the type of antibody detected can tell us something about the timing of infection. But unfortunately, antibody results were not analysed in the recent patient’s first infection.</p> <p>Another explanation is that different viral strains caused the infections with a subsequent impact on immunity. Genetic sequencing did show differences in viral strains, but it isn’t known if this equated to altered immune recognition. Many viruses share structural features, enabling immune responses to one virus to protect against a similar virus. This has been suggested to account for the lack of symptoms in young children who frequently get colds caused by betacoronaviruses.</p> <p>However, a recent study, yet to be peer-reviewed, found that protection against cold-causing coronaviruses did not protect against COVID-19. In fact, antibodies recognising similar viruses can be dangerous – accounting for the rare phenomenon of antibody-dependent enhancement of disease (ADE). ADE occurs when antibodies enhance viral infection of cells with potentially life-threatening consequences.</p> <p>It should be emphasised, though, that antibodies are only one indicator of immunity and we have no data on either T lymphocytes or memory cells in these cases. What these cases emphasise is a need to standardised approaches in order to capture the critical information for robust evaluation of the threat of reinfection.</p> <p>We are still learning about the immune response to COVID-19, and every piece of new data is helping us unpick the puzzle of this challenging virus. Testing remains a vital component of Australia’s success in managing COVID-19.

<p>We need to diagnose people infected with SARS-CoV-2, the virus that causes COVID-19, as early as possible so they can be isolated from others and their contacts quarantined. Testing also helps us understand to what degree the virus is present in the population, so we can tailor public health measures accordingly.</p> <p>If you’ve had a COVID-19 test, in all likelihood you received a PCR test. That’s the one with the throat and nose swabs, and is regarded as the “gold standard” in COVID-19 testing.</p> <p>But now the Therapeutic Goods Administration (TGA) has approved <a href="https://www.theguardian.com/australia-news/2020/sep/24/australias-drug-regulator-tga-approves-covid-tests-that-deliver-results-in-15-minutes">a new kind of COVID-19 test</a>, which can produce results in as little as 15 minutes, as opposed to a day or more for standard tests.</p> <p>So is this new rapid test set to revolutionise COVID-19 testing in Australia? Not quite yet.</p> <p><strong>The traditional tests</strong></p> <p>Nucleic acid tests, or PCR tests, can detect ribonucleic acid (RNA) of SARS-CoV-2 from a day or two before symptoms start, and for a week or more afterwards, as symptoms resolve. Of course, some people will test positive without ever having symptoms.</p> <p>PCR tests have been the backbone of SARS-CoV-2 testing worldwide. Because of the vast global experience with PCR tests and their high performance, they’re considered <a href="https://www.health.gov.au/resources/publications/phln-guidance-on-laboratory-testing-for-sars-cov-2-the-virus-that-causes-covid-19">the most reliable</a> COVID-19 test.</p> <p>PCR tests require specialised laboratory equipment and trained scientists and technicians to test the specimens; processing and testing take several hours.</p> <p>Since January, we’ve performed an astonishing <a href="https://www.health.gov.au/sites/default/files/documents/2020/09/coronavirus-covid-19-at-a-glance-23-september-2020.pdf">7.4 million</a> SARS-CoV-2 PCR tests in Australia, which has needed a massive upscaling of capacity in laboratories nationally.</p> <p>At times, demand for PCR testing has exceeded capacity, occasionally resulting in delays of <a href="https://theconversation.com/got-a-covid-19-test-in-victoria-and-still-havent-got-your-results-heres-what-may-be-happening-and-what-to-do-142821">up to several days</a> in getting results back to patients. Meanwhile, laboratories swamped with COVID-19 tests may be limited in their capacity to perform their routine business, including diagnostic testing for other infectious diseases.</p> <p>As people are required to isolate until they <a href="https://www.health.gov.au/news/health-alerts/novel-coronavirus-2019-ncov-health-alert/what-you-need-to-know-about-coronavirus-covid-19#testing">receive a negative test result</a> and their symptoms resolve, these delays may come at a cost to the person waiting, their family, and the economy.</p> <p>Recognising these costs may lead some people to choose not to be tested, Victoria has offered <a href="https://www.dhhs.vic.gov.au/covid-19-worker-support-payment">financial compensation</a> for people without leave entitlements awaiting test results.</p> <p>But delayed case confirmation also increases the time to identification and quarantine of contacts, undermining public health efforts.</p> <p><strong>What can we expect from the antigen test?</strong></p> <p>Rapid antigen tests can diagnose COVID-19 <a href="https://www.theage.com.au/national/victoria/15-minutes-to-diagnosis-the-quick-covid-test-that-could-change-the-game-20200923-p55yk1.html">in 15 minutes</a>. They’re relatively inexpensive and require a swab from the nose.</p> <p>These tests detect viral antigens, proteins on the surface of SARS-CoV-2. The immune system recognises these proteins as foreign, and responds by making antibodies to SARS-CoV-2 (“<a href="https://theconversation.com/antigen-tests-for-covid-19-are-fast-and-easy-and-could-solve-the-coronavirus-testing-problem-despite-being-somewhat-inaccurate-137977">anti-gen</a>” means antibody generator).</p> <p>Antigen tests perform best early in the infection when the amount of virus in a person’s system is highest. For a person with symptomatic COVID-19, this would be in the first week of symptoms. So they only pick up current infections – <a href="https://www.tga.gov.au/covid-19-testing-australia-information-health-professionals">unlike antibody tests</a>, which can detect if a person was previously infected with SARS-CoV-2.</p> <p>Four SARS-CoV-2 rapid antigen tests have been <a href="https://www.tga.gov.au/covid-19-test-kits-included-artg-legal-supply-australia">licensed for use</a> in Australia in the past two months.</p> <p>Unfortunately, rapid antigen tests for COVID-19 appear to be less sensitive than PCR tests, meaning they may give a negative result in someone who does actually have COVID-19. One of the recently licensed rapid antigen tests may give a false negative result in <a href="https://www.finddx.org/wp-content/uploads/2020/09/Bionote_Ag-INTERIM-Public-Report_20200918.pdf">up to 18.3%</a> of people with COVID-19 diagnosed by PCR.</p> <p>While a positive rapid antigen test result is more reliable, widespread use of these tests in asymptomatic people will result in some <a href="https://theconversation.com/the-positives-and-negatives-of-mass-testing-for-coronavirus-137792">false positive</a> results — that is, a positive test result in someone who doesn’t have COVID-19.</p> <p>At this stage, <a href="https://www1.health.gov.au/internet/main/publishing.nsf/Content/cdna-song-novel-coronavirus.htm">national COVID-19 guidelines</a> don’t include information on antigen tests. So a person with a positive antigen test would need to undergo a PCR test to be counted in Australia’s official COVID-19 case numbers.</p> <p><strong>Considering the pros and cons</strong></p> <p>We’re faced with a trade-off between the potential benefits of the rapid antigen tests — the ability to test larger numbers of people, consuming fewer laboratory resources, and quicker results — and the potential to miss a few cases because of the lower test sensitivity.</p> <p>Despite the lower sensitivity, increasing testing rates might result in an overall net increase in the proportion of COVID-19 cases diagnosed, and therefore a <a href="https://www.medrxiv.org/content/10.1101/2020.06.22.20136309v3">public health benefit</a> by preventing onward transmission from these cases.</p> <p>One possible strategic use of these tests may be in screening people without symptoms to detect asymptomatic and pre-symptomatic infection that might otherwise go undetected. This <a href="https://www.cdc.gov/coronavirus/2019-ncov/lab/resources/antigen-tests-guidelines.html">could include</a> people in workplaces where ongoing exposure to colleagues and the public is unavoidable, including sectors of the food supply chain or other essential services.</p> <p>Because of the lower test sensitivity for the rapid antigen test, a PCR test remains most appropriate for people with symptoms, those at greater risk of poor outcomes from COVID-19, and people working in high-risk settings like aged care and health care.</p> <p>While rapid antigen tests show promise, we’ll need to evaluate their efficacy in Australia before we can determine their role in our fight against COVID-19.</p> <p><em>Written by Katherine Gibney, The Peter Doherty Institute for Infection and Immunity; Deborah Williamson, The Peter Doherty Institute for Infection and Immunity, and Jodie McVernon, University of Melbourne.
